Not your parents' POPCORN!

If you have never had the many recipes made with popcorn, you will just have to forgo your diet and try one.

Funfetti Popcorn




ingredients:
2 bags microwavable kettle corn or white popcorn
1-1/2 cups white chocolate chips or vanilla candy melts
1/4 cup vegetable oil
1-1/2 cup white or yellow cake mix
1/3 cup rainbow sprinkles

directions:
- Pop the popcorn in the microwave, following packaging instructions. Transfer popcorn to a large bowl, being careful to pick out all of the unpopped kernels.
- Melt the white chocolate chips or candy melts in the microwave in 30 second intervals, stirring between each 30 seconds until it is fully melted.
- Stir in the vegetable oil to the melted chocolate until smooth. Then add the cake mix to the chocolate - the mixture will be thick, but mix until well-incorporated.
- Drizzle the chocolate/cake batter mixture over the popcorn and add half of the sprinkles. Use your (clean) fingers to toss everything together until evenly coated.
- Spread the popcorn onto wax paper-lined cookie sheets to allow the chocolate to harden and sprinkle the remaining sprinkles on top.
- Let popcorn harden for about 20 minutes on the counter, or 5 minutes in the fridge, and enjoy!



Butterfinger Popcorn Recipe:
(Makes 12 servings)

Ingredients:
6 cups popped popcorn
10-15 Fun Size Butterfinger Candy Bars (or however many you can get your hands on!)
1/4 cup butter
4 cups mini marshmallows

Directions:
Pour popcorn into a large mixing bowl. Coarsely chop Butterfingers into small pieces and fold into popcorn. Melt butter in a saucepan over medium heat. When butter is melted, add mini marshmallows and stir until constantly until smooth. Pour marshmallow mixture over popcorn and candy bars. Gently mix until popcorn is evenly coated and candy bars slightly melt. Let cool for a few minutes and enjoy!


Our friends made this popcorn and it was our first intro into these addicting recipes. It is so easy!
Directions:

1. Melt the chocolate in a double boiler or in the microwave. (Watch it closely if you use the microwave).

2. Microwave 2 bags of popcorn or pop about 7 oz. popcorn kernels.

3. In a large tub, (or 2 large bowls) drizzle melted white chocolate over popcorn. Mix and fluff as you go. Your looking for a light coat of chocolate on the popcorn -- too much will make the popcorn soggy and spongy.

4. Let popcorn cool in the refrigerator until the chocolate hardens. This is a great time to scoop servings of the popcorn into large ziplock baggys for easy storage.
